We apologize for the lack of posting the past couple of weeks. Basically we don't have an excuse, we're just slackers.
Anyway, things are going great. I've been working and Matt's getting ready for grad school to start on Monday. Our new favorite thing is to have people over for dinner. We really enjoy it and I apparently cook for 20 people anyway. We'd love for you to come over, just let us know and we'll plan a night. Last week our new found friends, Megan and Brock Birkenfeld came over. We met them through Nick and Carissa. They also just got married this summer. It's been so fun getting to know them and hanging out with them. Actually just since we've moved to our apartment we've met so many new people. We have been so blessed by the community at Living Hope and the Hendricks hospitality. I've learned so much just in the past 2 months about what it means to live in community. This is why we love having people over so much. If my husband had it his way, we'd have people over every night. So thank you Living Hope for showing us what true community means. If you're reading this and we haven't really met, we'd love to meet you and get to know you. So feel free to introduce yourself :)
Well, that was a much longer tangent then I expected. Back to the original point of the post. The night Brock and Megan came over I made Spaghetti Pie ( we call it Baked Spaghetti because the word pie with spaghetti sounds a little sketch). I had made it back in Padre and Jenn wanted me to post the recipe. After I made it again and realized how good it really was I decided to share it with all of you. So here you go:
Baked Spaghetti
1 (8oz) package spaghetti 1/2 cup sour cream
3 Tablespoons margarine 1 (32 oz) jar spaghetti sauce, I used Prego
1/4 cup grated Parmesan cheese 1 lb ground meat
1 egg 2 cups shredded mozzarella cheese
Preheat oven to 350 degrees. Cook the spaghetti using package directions;drain. While spaghetti cooks brown meat then add spaghetti sauce. Combine cooked spaghetti with margarine & parmesan cheese in a bowl; toss to coat well. Spread in a 9x13 baking dish. Combine the egg and sour cream in a small bowl and mix well. Spread over spaghetti & top with meat and sauce mixture. Sprinkle mozzarella on top. Cover w/ foil and bake for 30 minutes.
Go ahead and try it. It's super easy and very yummy. Matt doesn't even like spaghetti and he loves this!!!

Just to vouch for the Spaghetti Pie aka Baked Spaghetti- it is absolutely DEElicious!! And even if Erin wasn't such a great cook we would still hang out with you guys a ton, we promise- ya'll are great and we love this new friendship!

Hi! We don't know one another, but I love Lynsey Kramer (she was my wedding photog too) and got your blog from hers. My husband doesn't like spaghetti either...maybe I'll give this a try. THANKS!
